Tomato pesto sandwich

Everybody knows how to make a sandwich. Take 2 slices of bread and slap them together with a slice of cheese in between. However, there are a few key ingredients that separate a boring sandwich from a delicious one. Let's start with the bread. A lot of the taste depends on the bread you use to make your sandwich. I love bread - Ciabatta, French, Focaccia, you name it. Unfortunately, there are often times where a loaf of plain white is all you have at your disposal. Well, it'll have to do. Next is the cheese. I always have some type of cheese in my refrigerator. I usually add feta or mozzarella for a pesto spread but I thought I'd give provolone a chance and it was pretty great. Also, I added a few slices of tofu based sausage to add some protein to the sandwich. It was the best decision I've ever made.

You really need just bread, tomato, pesto and cheese. The remaining ingredients are optional.

Ingredients :

1. Bread - 2 slices

2. Cheese - 1 slice (I used provolone)

3. tomato - 1

4. Basil pesto - 1 tbsp (I used Barilla)

5. sun-dried tomato pesto or marinara sauce - 1 tbsp (optional - I used Rao's arrabiata)

6. vegan sausage - 1/2 piece (optional - I used tofurky)

7. onion - 1 or 2 slices (optional)

Procedure :

1. Spread basil pesto on one side of a slice of bread and tomato pesto/arrabiata sauce on the other slice.

2. Arrange the onion and tomato slices, tofurky slices (microwave for 30 secs prior) and cheese.

3. Grill or toast both sides on a pan.
