Ginger & Turmeric

Panini perfection

This version of panini shreaks Italian. Be sure to also check out a version with pesto here. We're looking for variations all the time, amiright..? It took me all about 15 mins including chopping all the vegetables. There's something heartwarming about watching your family wolf down the food that you so lovingly make.

Ingredients:

1. French bread - 6 inch, slit

2. cream cheese - to schmear

3. Vegetables - onions, grated carrots (2tbsp) , zucchini slit lengthwise

4. Cheese - any kind

5. Pasta sauce/ Arrabbiata sauce (I used Rao's arrabbiata sauce. When it comes to store bought sauce, you can't beat this brand. A little pricey but I haven't come across any other brand that tastes this good.)

6. Olive oil - 1 tbsp

7. Garlic powder - 1 tsp

8. Lemon and pepper powder blend - 1 tsp

Procedure:

1. Sauté onions in some olive oil with a dash of garlic powder and salt. Keep aside mixed with some grated carrots.

2. In the same pan, add in a little a more oil if needed and roast the zucchini slices with some lemon and pepper powder. I used the lemon & pepper spice blend from Costco.

3. While the zucchini cooks, spread some cream cheese on one side of the loaf.

4. Layer the zucchini, onion/carrot mix, shredded cheese and pour in a tablesppon of sauce on top.

5. Grill on a panini maker or a grill pan until done (about 2 mins).
