Who doesn't like pizza?! Everybody in my house, including my 1 year old (who has 4 teeth in total btw) loves it. We have pizza about once or twice a month and for the most part, we just order it in. When something isn't the healthiest item on the menu anyway, why bother making it at home, I say! However, sometimes I like to "Indianize" it and what better way than to add some soft Indian paneer/ cottage cheese. Make no mistake - the cottage cheese you get in regular grocery stores such as Safeway or Krogers isn't exactly the same as the Indian cottage cheese. I recommend getting it from an Indian store or making it at home. Here's a recipe that reminds me so much of good old times with family in India.
1. Pizza base - Boboli or any store brand.
2. Marinara sauce - 1 cup (Preferably Rao's marinara sauce)
3. Mozzarella / 3 cheese blend - 1 cup
4. olive oil - 1 tbsp
5. paneer - 4 oz approx.
6. vegetables of your choice (Onions, bell pepper , tomato, spinach, baby corn etc)
1. Preheat oven to 450 deg celcius.
2. Brush the pizza base with olive oil. I used Boboli but any brand should do. Make sure you follow the instructions for the brand carefully.
3. Add the cheese, then spread out the vegetables and paneer on top.
4. Bake for 8-10 minutes or until under edges are browned.
**Alternatively, you could saute vegetables like onion and garlic before adding to the pizza. You could even add coriander. Yes. You heard me.
