If you didn't already know, bruschetta is an Italian appetizer and it has always been our go-to order when we dine at an Italian restaurant. You can make a really easy version at home and Friday nights are usually bruschetta nights at my residence. The recipe presented below is quite basic. When it comes to Bruschetta, the fewer ingredients the better. The whole focus is on enjoying the bread, the tomatoes and cheese, so try not to skimp on the quality of these three things and you'll find out how unbelievable it is that something so simple can be so delicious. 'Nuff said.
1. Bread - A few slices (I used French but you can use Baguettes, Sourdough, what have you.)
2. Olive oil - 2 tbsp
3. Basil - A few leaves. I used dry basil because I was out of fresh leaves.
4. Balsamic vinegar - 2 tbsp
5. Pepper - 1 tsp
6. Salt - 1 tsp
7. Garlic - 2 (crushed fresh pods)
8. Tomatoes - 6 (I used campari)
9. Parmesan cheese - freshly grated (1 cup)
1. Mix crushed garlic with 1 tbsp olive oil and coat the bread slices with it.
2. Toast the bread to a nice brown and take it off the heat. You can use a toaster or oven (450 deg. for 5-6 mins) but I didn't want to fire up my large oven for 4 slices so I browned it on a pan.
3. Cube the tomatoes and toss with the remaining ingredients (Plus 1 tbsp olive oil).
4. Place the tomato mixture on top of the slices and top with freshly grated parmesan.
5. Watch your loved one devour it in seconds and then proceed to dig into your share.
