Lemon Pasta Salad

I hate that I am calling this a salad. Anything with pasta shouldn't be called salad. Period. That's just good sense. But, meh - who am I to argue with society. Pick your battles as I always say. Besides it doesn't involve sauce or cream so I suppose it qualifies. Regardless, this came about on a Friday evening. I was in my "live to eat" mood - as we all are at some point in our lives. I was not in the mood to cook. Let's address the elephant in the room shall we? I'm sure with covid-19 a lot of us are trying to stay indoors and cook with what we have on hand. That means you're probably doing a lot of cooking at home. Probably. And the easiest thing to cook is pasta - covid19 or not. Everybody loves a good pasta. Everybody wants to eat healthy. So, I put two and two together and made a pasta salad.

It took about 15-20 mins start to finish. I am not going to add precise measurements because it's ridiculous to add measurements for a salad. Throw in whatever you can, however much of anything and make it your own.

Ingredients:

1. Pasta - preferably penne. I used a vegetable kind.

2. Zucchini - 1

3. Onions - 1

4. Olive oil - 2 tbsp? 3? I do not know.

5. Spices - garlic powder, paprika,italian spices, oregano

6. Salt to taste

7. lemon - 1/2

8. Parmesan

9. Sundried tomatoes - optional

Procedure:

1. Cook the pasta per package instructions.

2. Meanwhile, saute the onions in olive oil with zucchini, sundried tomatoes, spices and salt

3. Once the pasta is cooked, add it to the vegetables and mix.

4. Squeeze in half a lemon and sprinkle parmesan cheese on top.
