I have a love-hate relationship with hummus. At certain times of the year, I'll have hummus with almost everything and at others, I wouldn't go near it with a ten-foot pole. I suppose the time has come for the former. This recipe does not include tahini for two reasons - a) I did not have a stock of it at home (I never do actually) and b) I do not care very much for it. Anyway, the recipe calls for fried onion. I suppose you could fry some onions yourself but I used some fried onions I bought from an Indian store.
1. Canned chickpeas - 1/2 can
2. corn - 1/4 can or 2 heaped tbsp
3. Olive oil - 1/4 cup
4. garlic - 1 clove
5. pepper - 1 tsp
6. Fried onions - 2 tbsp
7. lemon - 1/2
8. salt to taste
9. 2-4 tablespoons of water
1. Blend everything together until smooth. You can squeeze in the lemon too and use liquid from the canned chickpeas instead of water. Optionally add paprika for some spice.

Is tempering a big deal? Yes. Yes it is.

If it doesn't look good, it might not taste good.
