Dinner smoothie

We have all had days when our toddlers have slept right through lunch. (Well, those of us who have had babies anyway.) They either have a big breakfast and a big mid morning snack and are too full for lunch or by the time you can rush them back home for lunch after all your chores they are already asleep in the car. On those rare days, my baby is fed after he wakes up, which is usually around a time that's too late for lunch and a little too early for dinner. Come dinner time, I know that he may or may not end up having a proper dinner given a late lunch which is why I make a delicious dinner smoothie as a backup. My toddler loves smoothies and even if he is full, he can always make room for a smoothie. The protein in the peanut butter , almonds and yogurt and the carbs in the fruit and milk is enough to carry him through the night. Plus I sneak in some vegetables which is a bonus.

Ingredients:

1. Vanilla almond Milk - 1/4 cup

2. Peanut butter - 1 tbsp

3. Shaved almonds - 1 tbsp

4. Carrot - 2 tbsp (grated)

5. Banana - 1

6. Strawberries - 3

7. Yogurt - 1/4 cup

8. Whole milk - 1/4 cup

*The almond milk I had on hand was sweet and there is naturally occurring sugar in the fruits so I never did add any additional sweeteners such as honey.

Procedure:

1. Blend everything together and serve.
