Cucumber Sandwiches

A Doi moment really, when I thought of this. I was down with a terrible cold but the unfortunate truth is that mom's never get a day off. Not even on your worst days. You can be feeling dreadful inside but that doesn't stop your toddler from running Tonka trucks up and down your stomach. You can only order in meals so many times before you get sick of it all. So I did what all moms do. I mustered the last reserve of energy I had with a resolve to make something healthy under 5 minutes - opened the refrigerator and found a cucumber. And the rest was history.

Ingredients:

1. Bread slices

2. Butter (softened)

3. Cucumber - peeled and sliced

4. pepper and salt to taste

Procedure:

1. Lather butter on 2 slices of bread.

2. Spread cucumber slices and sprinkle some salt and pepper.

3. Close the sandwich, cut off corners and cut to triangles.

**TIP- Cucumber sandwiches taste great with the corners cut off and sliced into triangles. It really does make a difference. I did a terrible knife job here because I used a weird 3-in-1 sandwich knife instead of a bread knife like a normal person, but in all honesty, I think my family was grateful to get something homemade. Simplicity is what makes this recipe great - no fancy spreads or vegetables or grilling. Just some bread, cucumbers and a whole lotta love.
