Pineapple on pizza. You either love it or hate it. I can tell you one thing though. My pineapple hating husband couldn't get enough of this. This is an absolutely delectable item on the menu any day of the year. It isn't quite friendly to the midriffs but you could substitute low calorie/non fat options. For instance, I used a low cal whole grain flatizza base, non fat paneer (cottage cheese) and skim milk mozzarella but let's face it though. It's pizza. It's creamy and sinful and I'll bet you aren't here reading this blog if you are on a diet.
1. Pizza base - 1 large
2. Pizza sauce - 1 cup
3. Cottage cheese/paneer - 1 cup shredded or chopped
4. Mozzarella - 1 cup / as much as you need
5. Frozen/ fresh pineapple - 1 cup
6. Fresh cream - 1 cup
7. Parmesan - 1 cup
8. Salt - to taste
9. Pepper - 1 tsp
10. Garlic powder - 1 tsp
11. Butter - 1 tbsp
12. Onions, bell pepper- 1 cup (julienned)
13. Cilantro, green onions- 1/2 cup each (chopped)
1. Mix cottage cheese with cream, mozzarella, parmesan, garlic powder, salt and pepper.
2. Rub a stick of butter on the pizza base. You don't have to soften the butter.
3. Spread the cottage cheese mixture on top, followed by onions, bell pepper, pizza sauce, pineapple and top with cilantro (YES, CILANTRO) and green onions.
4. Bake as per package instructions - or until cheese bubbles. Mine was at 400 deg F for 15 minutes.
