Cool as a cucumber - Raita

I love everything about cucumbers. They are super healthy (just 95% water..say what?!), there's no cooking necessary, clean up is easy, they are tasty, and you can eat a ton without worrying about any part of it getting stored away in your private cookie pouch.

Cucumber raita is one of my husband's favorite side dishes and I can always supplement a simple roti and curry with a cucumber raita side to make it look like I slogged in the kitchen for 2 hours. It is essentially cucumber drowning in yogurt. It goes great with most Indian meals and there are plenty of variations out there - the only limit is your imagination.

Here's a one-bowl recipe to a simple, nutritious, flavorful side.

One-bowl recipe - cucumber raita

Ingredients:

1. Cucumber - 1 (Peeled and diced)

2. Mint Chutney - 1 tsp (Any store brand or substitute with fresh mint leaves)

3. Onion powder - 1 tsp

4. Salt - to taste

5. Yogurt - 2 cups

6. Water - 1/2 cup (optional)

Procedure:

1. Mix everything listed under ingredients.

2. Transfer to a fancy bowl and eat like a cave person.
