Another recipe in the "complete meal" series perfect on a cold winter's night. This is a fantastic dish with the simplest of ingredients right from your pantry. With the goodness of vegetables, lentils and beans, aromas from the warm spices and an unmatched taste, this is one meal you can never get enough of. And, it's actually ok to stuff your face with it because it is outrageously healthy.
1. Onions - 2 cups chopped
2. Garlic - 3-4 pods crushed
3. Olive oil - 1 tbsp
4. Vegetables of your choice - 2 - 3 cups (I added all my favorites - peas, corn, cabbage, carrots, bell pepper).
5. Water/Stock - 2 cups
6. Lentils - 1.5 cups (Any kind but I used toor dal)
7. Canned tomatoes (16 oz can) - 1
8. Spices - 1 tsp each of cumin powder, coriander powder, turmeric powder
1/4 tsp each of cinnamon powder, black pepper powder
9. Cilantro - 1/2 cup chopped
10. Lemon juice - 2 tbsp
11. Garbanzo beans - 1 can
12. Salt to taste (optional)
1. Throw everything into a slow cooker and cook for 4-5 hours on high until lentils are done.
2. Serve with some fresh cilantro and fresh-squeezed lemon juice mixed right in.
