Cheese Quesadillas

I meal plan for my little one each week. However, as many moms out there can attest, sometimes we just let it slip. Along comes Sunday night when you are either too tired or you'd rather muster all the energy you've left into binge watching your favorite Netflix shows forgetting for a brief moment, what a hungry toddler is capable of. Never fear. Quesadillas to the rescue. This gets done in 5 mins and my munchkin cannot get enough of it. The best part is, you can always sneak in veggies (grated) and then cook. Occasionally, I throw in some leftover mashed veggies from the afternoon. I never usually give my child leftovers from the previous day. Not because I have all the time in the world and irrepressible enthusiasm to make fresh food everyday, but because my little one had a stomach bug when he was younger and that scared me to kingdom come.

Ingredients :

1. Tortilla - 1 (Preferably whole wheat and Guerrero)

2. Cream cheese - 1 tbsp

3. Cheddar - grated 2 tbsp

4. Butter - 1/2 tsp

Procedure :

1. Smear one side of the Tortilla with cream cheese.

2. Top with grated cheddar.

3. Smear a pan with some butter. Place on heated stove top, cheese side up.

4. Fold and cook both sides until browned and cheese has melted.

5. Watch the kids at home (both young and old) chomp down.
