Cheddar broccoli frittata

Whoever thought to combine broccoli and cheddar in a recipe was a genius. Such a classic recipe.So very easy. Filling. Great for a weeknight. All you need are some cheddar, broccoli and eggs as your main ingredients.

Ingredients:

1. Cheddar - 1 cup (grated)

2. Eggs - 5

3. Broccoli florets - 1 cup (washed of course)

4. Butter - 1 tbsp

5. Oil - 1 tbsp

6. Salt - to taste

7. Pepper - 1 tsp

8. Onions - 1 (cut)

Procedure:

1. In a cast iron skillet, heat up some oil and saute onions for 2-3 minutes.

2. Add butter, broccoli and continue to cook for 3 more minutes.

3. Meanwhile whisk eggs with 2 tbsp water, salt, pepper and half the cheddar. You could add other seasonings as you wish.

4. Spread the broccoli evenly all over the pan and pour in the egg mixture. Once the edges are set a little, brush it aside a little to allow the runny part on top to slide underneath and cook.

5. Continue to cook until the bottom and sides are solid but top is still a little runny.

6. Spread the remaining cheese on top.

6. Fire up the broiler and broil (at 525 deg) for 3 minutes until the top is set.
