5 minute stuffed crust Quesadilla pan pizza

That title was a mouthful. So is this pizza. Ever craved a pizza but either hated the carb or considered the wait to taste a slice too long? This is by far one of the fastest pizzas you will ever make. It has the two most necessary qualities that make pizzas great - 1) tasty and 2) cheap. This was such a "duh" moment in my life and I wondered why I didn't think of it before. You could make it as fancy or as simple as you'd like. This below, is quite a bare-boned recipe.

Ingredients: (Makes 1 personal pan)

1. Whole wheat tortillas - 2

2. Mild cheddar shredded cheese - 1/4 cup (more or less)

3. Mozzarella - 1/4 cup (more or less)

4. butter / canola spray - 1 tsp (just to coat the pan)

5. Toppings - I had chopped onions (1/4) , sliced tomatoes (1)

6. Pizza sauce or marinara sauce - 1 tbsp

Procedure:

1. Fire up the burner, add a bit of butter to a cast iron pan and allow it to melt and coat the surface. 2. Place a tortilla, sprinkle some cheddar on top and add the 2nd tortilla to cover. Allow the bottom to cook for a minute. Turn it over (when the cheese has melted - about 1 minute) and lower the heat. (Maintain at the lowest setting).

3. On the cooked side, spread some sauce, veggies and top with mozzarella (in that order). Do not spread veggies last. That would be barbaric.

4. Broil for 3 minutes at 525 deg.

I made 2 versions, one a veggie and the other a good ol' cheese pizza.
